The Popularity Of Fried Rice

Fried rice is popular all over the world. It is eaten either as the main dish or as a side dish. In China, it is served either just before the last item of the meal course or before the desert. In America, the left over rice from the previous day is used to make fried rice on the following day.

The UK is another country where fried rice is very popular. Nobody is certain about the origin of fried rice. It is believed that fried rice has its origin in China in the seventh century AD, during the reign of Sui dynasty. The birth place of fried rice is believed to be Yangchow or Yangzhou in China.

Yangchow fried rice is the epitome of fried rice all over the world and fried rice from other parts of the world is compared to Yangchow fried rice to assess its quality. The quality and type of rice used in making fried rice is what makes fried rice so palatable.

Long grain rice is the most suitable one to make fried rice as it contains less amylase, a substance that makes the rice sticky when cooked. Though both white and brown rice can be used, white one is preferred to brown rice. Both Basmati and Jasmine are good varieties of rice for preparing fried rice because of their superior flavor. What makes a great difference to fried rice is not the type of rice used but the process of cooking it.

To prepare the best quality fried rice, the cooked rice has to be cooled at least for two to three days in a refrigerator. Freezing for such a long time will remove most of the water content from the cooked rice and it will not be sticky anymore. If so much time is not available, gently dry the cooked rice on a baking sheet and then freeze it for about half an hour. This process will give the rice the appearance of being two or three days old. The usual ingredients added to fried rice are meat, shrimp, egg and a variety of vegetables. Garlic and spring onion are used to season fried rice.

There are different ways of adding these ingredients to fried rice. Some cook all the vegetables separately while others cook the vegetables together. The cooked vegetables are then added to the fried rice towards the end of the cooking process for fried rice. Adding small quantities of sauce will enhance the taste and flavor of fried rice but if the quantity of sauce is more, it will spoil the wonderful taste of fried rice.
